Ingredients (serves 2)
° 250g spinach, cut into 5cm length
° 2 slices ginger, finely chopped or finely shredded
° ¾ tablespoon olive oil
° salt, to taste
Method
1. Heat oil in a wok. Add the ginger and fry till fragrant.
2. Add the spinach and stir-fry briskly for 1-2 minutes. Season to taste with salt. Transfer to a serving dish and serve immediately.
