Seaweed Roll

S$1 for 1 piece/roll

Just for S$1, you get this much (slightly crispy outer layer after toasting for a longer time )

I like these few lines I read in a book, it says -

"CONTENTMENT

The more we pursue sensual pleasures, the more we crave them and chase after distractions. Our dissatisfaction increases and creates mental stress and physical discomfort. Recognize how this happens, and learn to be content with a few necessities. You will be more carefree and joyful. "

So, I try to enjoy the simple meal now and learn to be contented.  Cooking has become very simplified.  I purchased this Seaweed Roll which is made with layer and layer of beancurd skin seasoned with simple ingredients that has  nori sheet in between which costs around S$5 for 5 pieces.

Instead of deep-frying it, I just placed them in the oven toaster and let it toasted for 10-15 minutes (you are free to do other chores or prepare other dishes).

You can brush some oil on it or use none, cut it prior to toasting or do it after that, it is all your preference.  It can be a healthy and simple dish to go with plain/brown rice, congee, as snack or finger food.

You can dip it with chilli sauce or mayo or any other sauce you prefer.  You can even choose to wrap it with lettuce too. So just follow your mood, explore and be open to all possibilities and have fun too  ...

The Art of Being a Creative Vegetarian No-Cook: Peanut and Lotus Root Congee

The Art of Being a Creative Vegetarian No-Cook! Let me share a little secret here, how to enjoy a piping hot Peanut and Lotus Root Congee, if you can’t find any Vegetarian Eatery offering this dish!

Very Simple. The trick is to get (take away) Peanut and Lotus Root Soup from a Vegetarian Stall. Next, in your own kitchen, take out ½ rice cup of washed and frozen rice grain. Throw the soup and rice grain into a claypot, bring to a boil and simmer for 10 – 15 minutes.
When the congee is ready, just garnish with some fresh coriander which is optional. Add pepper if desired.

What’s next ?- Eat directly from the claypot of course (save the task of washing another bowl, be nice to Mother Earth) ...

Do you need to be an expert in cooking? No, Everybody, even young kids can do this simple task! It is similar to cooking instant congee!

So, next time, if you find a stall that sell palatable Peanut and Lotus Root Soup, get some home and frozen it till you need to whip up a quick meal or when a cold or sore throat attack.

I got mine from Eight Immortals @ Causeway Point (Woodlands) – Horizon Food Mall, Level 5 @ S$3 for a big bowl.

Satay Rice with Gochugjang

Well, this is the creation that I mentioned in my recipe Bibimbap from the Sea, – Singapore Variant Bibimbap - using cucumber, onion, satay rice and Stir-fried tempeh with Gochujang chilli paste. I just don’t know how to name this recipe. I used Lotong Rice to replace Satay Rice, in fact, there are almost the same and can be purchased from Supermarket or Wet market.

This is something simple and you do not need to cook, just heat up the Lotong Rice. For a more nutritious one, just add stir-fried tempeh with Gochugjang chilli. Otherwise, this is fine.

Preparation: 30 mins

Ingredients (serves 2)
° 400g Lotong rice, steamed
° 75-100g shredded Japanese cucumber
° 50g onion, sliced
° sesame oil (optional), to serve.
° gochujang (Korean Hot Bean Paste), to serve

Method
1. Cut and divide Lontong Rice into individual serving plate. Arrange shredded cucumber and onion on the Lotong Rice. Garnish with some sesame seeds.
2. Serves with a plate of gochujang and sesame oil.

Instant Vegetarian Satay!

I got this packet of 10 sticks of Vegetarian Satay that come with Satay Peanut Sauce too, from Friendly Vegetarian Food Supplier. The shop assistant recommended that I take this brand – Tian Hock (天福斋供应商). Oh, it turns out delicious.

What I did was place the satay in my oven toaster, brush some oil on it and toast it. Next, I cut some Japanese cucumber, onion (omit, if you desired) and steamed the Lotong Rice that I got from the Supermarket and warm up the Satay Peanut Sauce. The Satay Peanut Sauce is sufficient for the satays, cucumber and Lotong Rice.

And all with 15 minutes, I can enjoy this lovely vegetarian satay at home without much fuss.

As for the price, oh I can’t remember now and this supplier does not have the habit of pasting price tag on their product.

“Nian Gao” 年糕 roll with Grated Coconut

Celebrating Chinese New Year (aka Lunar New Year), “Nian Gao” 年糕 is a must-have traditional treat for each household, it represents the meaning of “going higher every year” implying progress in whatever one does (career, business, studies or status) in a new year.

“Nian Gao” is a type of steamed glutinous rice cake. The one in the photo is the traditional type steamed in a banana leave case rather than plastic wrapper. When it is just freshly made, it is very soft and you don’t have to put them in the refrigerator. Then, it gets harden and you can then cut it into slices and deep-fried with slice of sweet potatoes.

Last year, I have a special Samosa in Malaysia - Ipoh. Guess what, the filling of the samosa is not curry potatoes, is Nian Gao plus sweet potatoes. It is so creative, the Nian Gao and sweet potatoes were cut into little triangle and wrap with spring roll wrapper prior to deep-fried. When I picked up the Samosa and ate it, it took me a while before I can decipher what was in it.

Besides, deep-frying it, you can steam it again until very soft and roll in a plate of fresh grated coconut until it is evenly coated. Just like what I have in the photo.

As time goes by, lesser and lesser people like to eat traditional Nian Gao. Sometimes, people just buy them for praying or just for its symbolic meaning.

Some Vegetarian Restaurants come up with different Nian Gao for the modern generation. There are Yam or Radish or Water Chestnut added to the Nian Gao or Nian Gao made in the shape of fish for auspicious connotation, that come in beautiful gift box where it look so presentable as gift.

Nian Gao is only available during Chinese New Year, if you haven’t got any yet, hurry! quickly grab some before it is gone or you will have to wait till next Chinese New Year.

Sushi Wrap with Lettuce

I happened to read an old article on ‘Office pal-itics’ and surprise to read below:

“… But much like low-fat Vegetarian Food diet which is theoretically good for you, I can’t see much joy or laughter in such an existence. I would probably go mad.”

Well, Vegetarian Food is definitely good theoretically or not, and is getting interesting, fun and yummy as well. Now, the Vegetarian Food scene is going to be different from the past, it can storm the world if more energy has been channeled to explore in this area.

If you don’t believe me…., let take sushi for example! Must Sushi Rice be always wrapped with nori sheet, can’t it be eaten in another way. Now, you may even see more innovative ways in eating sushi – a bowl of sushi rice topped with some veggies, in some Sushi Cookbook.

My way of having sushi –a combination of Japanese Sushi and Korean Lettuce Wrap Rice. Just cook some rice and mix well vinegar, salt, sugar, mirin (optional) or get a pack of powdered sushi mix from the supermarket. Garnish with some toasted sesame seeds and finely chopped carrot (optional). Serve with some lettuce leaves and shredded nori.

To eat, just take a lettuce leaf, scoop some rice on it, top with shredded nori and wrap it up. Next just put it into your mouth! Fun and yummy!

Froot Loops Cereal with Soymilk/Amond Milk

Froot Loops Cereal with Soymilk/Amond Milk

I have seen my boy’s classmate having Froot Loops with Milk for Lunch in school.

Usually, just pour cold milk on and it is ready to serve.

But must it be cold milk?

It tastes yummy with reduced sugar soymilk and almond milk too.

Vegetarian Kimchi Instant Noodle

Vegetarian Kimchi
If you have Vegetarian Kimchi, whipping up a bowl of Kimchi Instant Noodle is not a problem at all. I used Tung-1 Instant Vegetarian Noodle, half the sachet of the seasoning and added 25g of chopped kimchi to it. Add more dried chilli flakes if desired.
