Spicy Stir-Fried Yard Bean

Omit the tempeh, if desired.

Preparation: 8 mins, Cooking time: 5 mins

Ingredients (serves 2)
° 200g yard bean/long bean, trimmed and cut into 3cm lengths
° 50g tempeh, chopped or cut into small cubes
° 2 tablespoons vegetable oil
° ½ tablespoon curry powder, mix with 1-2 tablespoons water
° salt to taste

Method
1. Heat the oil in a wok or non-stick pan. Add the tempeh and pan-fry till crispy or golden yellow.
2. Throw in the yard bean and stir-fry for 2 minutes.
3. Stir in the curry powder mixture and stir fry briskly or until the yard bean is tender. Sprinkle with a little bit of water if it is too dry. Season to taste with salt.
4. Transfer to a serving dish and serve immediately.

Hahaha.. I love tempeh too!!
Btw, Crystal, you don't use onions in your food rite? I love onions but seems to me after eating onions, I get more "air" coming out from the *top* and *bottom*. I have heard that onions/garlics are harmful to vegetarians.. Is it really true, I wonder?

I love onion, shallot, ...

Normally, for the stir-fry, i like to use garlic or ginger. So for those who don't consume garlic, just use ginger or totally omitted them if desired.

For rempah, then, the onion and garlic needs to be replaced by lemon grass, ginger, blue ginger etc to form the "body".

Crispy shallot is added, if on demand. My boy loves them. I add garlic in the porridge for my boy when he was a BB.

I used to omit garlic and onion, but then, later, i add them back to my diet, for i think 11 years already. So far, no side effect on me.

Whether it is harmful, is still a big question mark to me! :)

Oh, thanks so much for all your tips and info about this. Because I keep getting advice from other vegetarian/used to be vegetarian Buddhist friends who tell me I must not eat the five pungent roots because it will harm my health. And based on your testimony of 11years, I think I can be assured there are no harmful effects. Thanks!!! I felt I cannot omit them from my diet because I really love them. Haha..

Vegetarian in India, they are eating onion, generation after generation. They are ok, so i guess it should be ok.

Just 'listen' to your body, it should be ok.

I am a little different, dun really use onions and garlics, unless its in the curry powder, i find them tooo strong for me dun like to use too much of them.

I tried this, but using an Indian curry powder brand. Not too suited for this recipe!

I'm gonna use another curry powder mix, from a Chinese manufacturer :D
