Veggie & Fruity Salad

We had this simple yet wonderful salad at KMSPKS. We like it. We re-create it. We share it. The salad we had, have some grapes too, add them or any other fruits you desired. I omit vinegar/lemon juice, salt or sugar totally, as I find the salad cream after mixing with the fruit had the just nice consistency.

Preparation: 8-10 mins

Ingredients (serves 2)
° 100g green apple dices
° 100g red apple dices
° 75g carrot dices
° 75g Japanese cucumber dices

Salad Dressing
° 2-2½ tablespoons vegetarian salad cream/ vegan mayonnaise

Method
1. Combine all the ingredients in a bowl and mix well. Serve chilled.

Yes,
Apple dices (with skin on) are great salad ingredients and they enhance one's appetite.:-)

Hi Anonymous,

We were there for a retreat, S$60 for 3 full days (stay out) with lunch included. Wow, we were all well taken care of, there was so much to eat ..., the food kept coming ...

And this dish was also served at the station where we can get free food - the free soupy noodle.

During this year Vesak, KMSPKS also served good vegetarian food. There were few vegetarian dishes with soup, noodles etc per tables - all free, everyone can enjoy it.

Yes, Diana Tan, it is simple, easy and yummy - no cooking!

Japonese cucumber are really excellent and nothing compared to the European ones. I wish we found some here.

Virginie, i like Japanese cucubmer too:) Maybe the Asia Market, do have stock.

Japanese Cucumber + potatoes with Peanut Sauce (those for satay), is another nice salad.

If you like, can add nuts and chill it first then eat, yummy keke. don't think is good to add sugar because the salad and fruits and very sweet already.

You are right!

If lemon juice is added, sugar maybe require to offset the sourness ...

If little kid doesn't like sour (green apple is a bit sour), then, either use red apple totally or add a little bit of sugar to kill the sour.

On the whole, the salad cream is sufficent already but again it depends on the brand etc.

i love your blog!! and admire u alot..
i'm considering to convert to b a vegetarian...had already cut down alot on meat for a year.
looking at animals being killed it really pains my heart.
i have a dog at home, and imagine her being slaughtered. =(

Went to your blog, you have a kind and compassionate look, so to be a vegetarian or vegan, it is just a matter of time.

My gut feeling tell me, you will be able to switch to a more healhty and compassionate diet, without much problem.
