Ingredients (serves 2)
° 200g enoki mushroom, base trimmed
° 25g shredded carrot
° some coriander leaves
° ½ teaspoon black and white sesame seeds (optional)
° ½ teaspoon crushed red pepper
Dressing
° 2 tablespoons plum sauce
° 1 teaspoon (1-1½ limes) freshly squeezed kalamansi lime juice
° sugar to taste (optional)
Method
1. Mix all the dressing ingredients in a bowl. Set aside.
2. Arrange enoki mushroom, carrot and coriander leaves on a serving plate. Garnish with sesame seed and crushed red pepper.
3. Serve with dressing.

enoki can be eaten raw?
Yes, yes, it can be eaten raw. You can add them to Yu Sheng too.
