Edamame 'N' Corn Salad

A simple and colourful salad! Whatever combination or quantity of the ingredients used is possible, just make sure they are balanced and in harmony with the colour, texture and appearance of the food.

Preparation:     8 mins  Cooking time:  8 mins
           
Ingredients (serves 2)
°         150g edamame beans
°         100g corn, blanched
°         50g carrot dices
°         1 teaspoon sesame oil
°         salt, to taste
°         some roasted/toasted white sesame seeds

Method
1.      Place the ingredients in a bowl, mix well and serve.

Earth 'N' Ocean Salad (Hijiki Seaweed Salad)



A simple yet easy-to-do side dish, marrying the ingredients from the Earth which are carrot and edamame and hijiki seaweed from the blue ocean. Keep the water for blanching carrot and hijiki seaweed as soup base for noodle or clear soup, if desired.
Preparation:    15 mins

Ingredients (serves 2)
°         2 tablespoons (15g) hijiki seaweed, soaked with 500ml water for 15 mins, drained well  and blanched
°         50g carrot dices, blanched
°         50g edamame
°         3/4  tablespoon sesame oil
°         1/2  tablespoon sugar
°         1 tablespoon light soy sauce
°         some sesame seeds (optional)

Method
1.    Combine all ingredients in a bowl and mix well. Serve chilled if prefer.

Potato and Cucumber Salad with Peanut Sauce


I like the Peanut Sauce that comes with the Vegetarian Satay that I got from Friendly Vegetarian Food Supplier.  Since there was some Peanut Sauce left, I decided to have whipped up something similar to the Indonesia dish - Gado Gado.

I steamed a potato (peeled and diced), sliced some Japanese cucumber and with some vegetarian Tapioca cracker (or papadum) and use the peanut salad as dipping sauce.  This is just one of the many ways to enjoy potato, if you like peanut sauce or not allergic to peanut.  Potatoes are not just great for any meals but are also good for you and your body.  It is loaded with a good amount of vitamin C, potassium, fibre, antioxidants, with a low calorie count of 110, yet zero fat and cholesterol!

p.s:  Vegetarian Tapioca Cracker goes well with the peanut sauce, and it adds some texture to this dish! Limit the intake or omit this for a more healthy meal.

French Beans Salad with Miso Tofu Dressing


Simple and fun to serve as side dish or salad! Omit tofu and replace with oil if desired.  Add few shreds of carrot for a colourful presentation.


Preparation:      10 mins  Cooking time:   5 mins

Ingredients (serves 2-4)
°         150g French bean, trimmed, cut into small section and blanched
°         Some sesame seeds and chilli flakes or shichimi for garnish

Miso Tofu Dressing
°         100g silken tofu
°         ½ tablespoon miso paste or to taste
°         1/3 - ½ tablespoon sugar or to taste  
°         Few drops of sesame oil (optional)

Method
1.       Combine the miso tofu dressing ingredients in a bowl. Mix and mashed well.
2.       Add in the French beans and mix well. 
3.       Garnish with sesame seeds, chilli flakes or shichimi and serve.

Potatoes ‘N’ Veggie Salad with Paprika Mock Floss Furikake




Potatoes Salad with a different twist 

As filling for Sandwiches ...
Paprika Mock Floss as always be used in Potatoes Salad to give it a new twist and you can also use it as filling for sandwiches! No Mock Floss for this furikake, just omit it! For children who do not take spicy food, omit the chilli flakes. This would be a good dish to introduce children to eat raw vegetables like celery, carrot and onion cut into tiny bits and by mixing them with cooked potatoes.


Preparation:      15 mins Cooking time:    15 mins

Ingredients (serves 2-4)
°         2 potatoes, peeled, cubed and steamed
°         2 stalks celery, chopped or diced
°         1 onion (optional), chopped
°         ½ carrot, peeled and chopped
°         mayonnaise/vegetarian salad cream or to taste
°         salt and pepper to taste
°         Paprika Mock Floss Furikake to taste 


Method
1.       Combine all ingredients in a salad bowl and mix well. Serve chilled.

Special Tempeh in Lettuce

This is another simple homestyle recipe by marinating the tempeh with Vegetarian BBQ Sauce and toasted them in the oven toaster. Wrapped the tempeh cube with a small piece of lettuce with carrot shreds (optional), it is a light salad and can easily pick up and eat by hand.


Do you need a dipping sauce for this, maybe yes and maybe no. The Vegetarian BBQ Sauce on the tempeh is tasty enough to go with fresh lettuce. If a dipping sauce is required, salad cream mix with fresh lemon juice and sugar can be used.

Preparation: 8 mins Cooking time: 15 mins

Ingredients (serves 4)
 200g tempeh, cubed
 1½ tablespoons Vegetarian BBQ Sauce
 Some lettuce
 Some carrot shreds (optional)

Method
1. Combine the tempeh and vegetarian BBQ sauce in a bowl and mix well. Let it stands for few hours if possible.
2. Put the marinated tempeh in the oven toaster and toast for 15 minutes.
3. Serve with lettuce and carrot shred.
